Ingredients
- Baby arugula
- Baby kale
- Radishes
- Green onion
- Feta (optional)
- Salt
- Pepper
- Olive oilย
- Lemon
Instructions
- Chop arugula and kale. Slice green onion. Slide radishes, then halve/quarter (depending on size).
- Toss arugula, kale, and green onion together in a bowl. Drizzle with olive oil (1-2 tsp per serving) and toss well. Sprinkle with salt and pepper, then a squeeze of lemon juice. A little goes a long way! Toss again.
- Divide into serving bowls, if desired. Top with sliced radishes, crumbled feta, and fresh ground pepper.
