bell pepper + cucumber salad
This crunchy, fresh salad is great on it own as a quick, flavorful, fiber-filled side. The flavors pair well with most any protein or other dishes to build an easy meal.
We also love this one on a sandwich or in a wrap, or as a component in a hearty meal bowl!
- cucumber (3 snacking or 1 regular)
- bell pepper (4-5 mini or 1 regular)
- 1 Tbsp olive oil
- 1 tsp lemon juice (or 1/2 tsp vinegar, any kind)
- 1.5 tsp papi spice
- Peel (if desired) and chop cucumber. Slice/chop bell pepper.
- Mix veggies with olive oil, lemon juice/vinegar, and papi spice.
