This creamy vegan caesar dressing will hit the spot, even for the most discerning of caesar salad lovers. Made from a cashew base, with capers to give it the right sharp, salty flavor. I suggest serving over baby kale with chickpea croutons for an added healthy protein crunch!

Ingredients

  • 0.5 c rawΒ cashewsΒ (soaked in cold water 6+ hours, or in boiling water for 30 minutes)
  • 0.25+ cΒ water
  • 2 tbspΒ olive oil
  • 2 tspΒ lemon juice
  • 1 tspΒ white wine vinegar
  • 1.5 tspΒ capers
  • 0.5 tspΒ dijon mustard
  • 1Β garlic clove
  • 1 tspΒ vegan worcestershire sauce
  • 0.25 tsp roastedΒ garlic granules
  • 0.25+ tspΒ salt
  • 0.25+ tspΒ pepper
  • optional: 0.5 tspΒ nutritional yeastΒ or a bit ofΒ vegan parmesan

Instructions

  1. Drain the cashews.
  2. Combine all ingredients in a high-speed blender or immersion blender container.
  3. Blend until dressing is smooth, adding more water to achieve desired thickness.
