cc special cheese crackers
Inspired by Cheez-Its, but better!Β cc special cheese crackers are light and crispy and packed with flavor, and mostly cheese, which to us says protein. They're really a full snack, not just a cracker.
You just need a few simple ingredients and a food processor to create your own homemade (highly addictive) cheese crackers without any weird ingredients or fillers.Β Β
8 oz sharp cheddar cheese, grated
1 c flour
1 1/2 tsp cc special
1/4 c butter (4 Tbsp), cubed or grated
about 4 Tbsp milk
The instructions below are for a food processor. I have not tried this recipe yet without one, but experiment and let us know how it goes!
- Grate cheese, grate/cube butter. Preheat oven to 375 F.
- Combine cheddar, flour, cc special, and butter in a food processor and process until crumbly. If your food processor is small, do two batches.
- Put crumbly mixture in a bowl. Add 2 Tbsp milk and mix. Continue adding milk 1 Tbsp at a time, until dough comes together. Sometime it helps to use your hands for this part!
- Put a piece of parchment on your work surface. Divide the dough in half. Flatten one half into a rectangle, then place on the parchment. Cover with another piece of parchment, then roll out to about 1/8" thick.
- Cut the rectangle into 1" squares. You can trim the edges and make them all perfect squares, or just let the edge ones be organic.
- Line a baking sheet with parchment paper, then spread the cut squares out. Poke a hole in the center of each (I used a chopstick). This is not just for looks! It helps the air escape and the crackers get crispier.
- Bake for about 16 minutes.
- Remove from oven and remove crackers from the tray immediately so they don't burn. Cool crackers on parchment or a baking rack. I like to pull the entire piece of parchment off the tray onto the counter with crackers on it, so I don't have to remove the crackers individually.
- While the first batch is baking, repeat the rolling/cutting/poking process with the rest of the dough.
- Once the crackers are cooled completely, store in an airtight container.
