Castelvetrano olives are the new favorite in our houses - buttery, briney, and mild. Paired with punchy sugo salt and bright citrus zest, these marinated olives are a hit with drinks, on a cheese or meat board, or as a fibrous veggie starter to a meal.

Ingredients
- 1 c castelvetrano olives
- 1 1/2 Tbsp olive oil
- 1/4 orange/mandarin/tangerine, zested*
- 1/2 lemon, zested*
- 3/4 tsp sugo salt
*if you only have lemon or orange, just double the amount of the individual fruit and omit the other! (ie: 1/2 orange and no lemon, or 1 lemon and no orange)
Instructions
Toss all ingredients together. Enjoy immediately, or allow to marinate in the fridge until you're ready to eat.
