Ingredients
The below recipe makes 2-4 servings. This dish keeps well in the fridge, so is a great food prep side dish or make-ahead meal item!
- 2.5 cups shredded carrots (about 5-6 carrots), we love a mix of orange and purple
- 0.5 cup pepitas (pumpkin seeds)
- 0.25 cup olive oil
- 2 tsp lemon juice
- 1.5 tsp ranch it up
- 1 tsp honey
Instructions
- Shred carrots. Add to a bowl with pepitas.
- Mix olive oil, lemon juice, ranch it up, and honey, until the honey is dissolved.
- Pour the dressing over the carrots and pepitas, then mix well.
