edamame + seaweed soba bowl is a savory, balanced meal made from all shelf-stable or frozen ingredients! We like to keep these few simple items on hand, so we always have this quick meal in our back pocket when it seems like there's nothing to eat.

Easy to make for one without leftover ingredients! Also great for a full family.

If you'd like to make this a hearty soup, simply add about 1 more cup of the cooking liquid to your bowl and double the veggie umami.

If you're feeling wild, throw in other veggies, protein, or flavor pops you have lying around - pickled vegetables, a fried egg, leftover chicken, green onions, chili crisp... Get creative and use up things around the kitchen!

edamame + seaweed soba bowl

Ingredients

  • 1 serving soba noodles
  • 1/2 c edamame (shelled)
  • 3/4+ tsp veggie umami
  • 1 serving nori/toasted seaweed (any variety or flavor will work!)

Instructions

  1. Bring a pot of water to a boil. Add soba noodles and edamame. Cook about 7 minutes, or according to soba noodle package instructions.
  2. Put about 1/4 c cooking liquid in your serving bowl, with noodles and edamame. Mix in 3/4 tsp veggie umami.
  3. Tear the nori/seaweed sheets into bite-sized pieces and top your bowl. Sprinkle with more veggie umami, if desired.
