Every year, we get a few sweet weeks of peaches here in central Texas. And it's a wonderful few weeks! This recipe is one I pull out each year when the peaches are ripe and local. It's also a great way to use up bruised, over-ripe, under-ripe, or otherwise imperfect peaches - if you ever find yourself with some of those.
fresh peach crumble is easy to make (just takes time to bake) and the flavor is incredible. This sweet treat is lightly sweetened with honey, which complements the peaches and allows them to shine! Plus, you can feel good about a treat without refined sugar added.
This recipe is written to be scaleable. The below ratios are for 1-2 servings, baked in a small oven-safe dish. Double, triple, quadruple, etc... as desired! The picture here is about a 4x recipe, in an 8x8" pan. Also feel free to just double the topping part, if you want more of the decadent crumble pieces. The best thing about making things at home is making them exactly how you want!
Scale this up as desired to fit the pan you want to fill, or how many peaches you want to use! For a full pie pan or a crumble like the one pictured, you will likely need about 8-10 peaches.
Filling:
- 1-2 peaches (depending on size, 1 large or 2 smaller)
- 1 Tbsp honey
- 1 Tbsp flour, or gluten free alternative
- 1/8 tsp salt
- optional: 1/4 tsp vanilla extract
Topping:
- 2/3 c oats or hemp hearts, or a mix
- 1/4 c flour, or gluten free alternative
- 3 Tbsp butter, or non-dairy alternative
- 2 Tbsp honey
- 1/4 tsp salt
- optional: 1/4 tsp cinnamon
- Preheat oven to 350 F. Butter your pan. Melt the topping butter and set aside.
- Slice the peaches in about 1/3" slices. Thicker pieces will have more bite once cooked, while thinner pieces will be softer. We also never peel the peaches - it's an extra step, plus we like the flavor, texture, and extra fiber from the skin. But peel if you want!
- In a bowl, toss the peach slices with honey, flour, and salt. It might not be pretty, but that's fine! Just make sure everything is mixed up well. Pour the filling into your buttered pan.
- Rinse and dry that bowl, or get another dry bowl to mix the topping. Add dry ingredients - oats/hemp hearts, flour, salt, and cinnamon if using. Pour honey and melted butter over dry ingredients, then mix well until crumbly. We like to use our hands for this step, as it help us get the texture we like.
- Top the filling with your crumble mixture.
- Bake until the peach filling is bubbly and the topping is browned. This can take anywhere from 25-45 minutes, depending on pan size and thickness of the peaches/topping. Start with 25 minutes, then reassess and check every 5-10 minutes until it's perfectly cooked!
