fresh zucchini salad with parmesan, lemon, + herbs
So quick to throw together, this light and flavorful salad is truly delightful. It makes a satisfying meal with your favorite protein and is also an impressive (yet simple) side dish in a larger meal.Β
Make anywhere from 1-2 serving using a single vegetable, or scale up for more people. This salad will keep for a couple days in the fridge, getting softer as it marinates - so make ahead if that makes your life easier.
- zucchini/squash
- olive oil
- medi mix
- lemon juice
- parmesan (or another hard/crumbly cheese)
- optional: mint or another fresh herb (adds an interesting fresh twist to the whole dish, but it it still absolutely wonderful without)
I never measure for this. I add the ingredients, taste, then adjust if needed.
- Slice the zucchini/squash very thin, about 1/8" thick (or use a mandolin, but entirely unnecessary). Put in a bowl.
- Toss with olive oil (about 1 1/2 tsp per small zucchini/squash). You want them all to have a nice coating.
- Squeeze lemon juice over the squash (about 1/4 lemon per small zucchini/squash), then sprinkle with medi mix (about 3/4 tsp per small zucchini/squash),. Toss to mix.
- Sprinkle with grated parmesan/other cheese to your preference and add mint, if using. Toss once more and serve!
