Crunchy, herby, and satisfying, our greek cucumber salad makes an amazing starter or side. Plus, you can throw it together in about 5 minutes!Β
The feta adds umami flavor, creamy texture, and a nice little boost of protein to this light, simple salad. Sub in a vegan alternative, or leave it out entirely, if dairy isn't a part of your diet. Some chopped nuts or seeds would make a great addition, as well - if not traditional, still delicious.
- 1 c sliced/chopped cucumber
- 1/4 c cherry tomatoes, halved (or dice a regular tomato)
- 1/8 c sliced red onion
- 2 tsp olive oil
- 1 tsp red wine vinegar (or any vinegar)
- 1 tsp medi mix
- 1 oz feta cheese
This recipe makes enough for 1 large or 2 small servings. You might want to double it!
- Prepare all the vegetables and put them in a bowl.
- Add olive oil. Toss to coat.
- Add medi mix. Toss again to distribute seasoning.
- Add vinegar, then mix again.
- Add feta and carefully mix one more time.
