the last taco recipe you'll ever need (last tacos)

Ingredients

  • 1 lb ground meat or plant-based alternative (we love bison here!)
  • 4 tsp ranch it up
  • 1.5 tsp faco belle
  • 2.5 cups shredded carrots (about 5-6 carrots), we love a mix of orange and purple
  • 0.5 cup pepitas (pumpkin seeds)
  • 0.25 cup olive oil
  • 2 tsp lemon juice
  • 1 tsp honey
  • arugula
  • tortillas (use whatever you like best, or omit and make this a bowl)

Instructions

  1. Heat a skillet over medium-high. Add ground meat, 2.5 tsp ranch it up + 1.5 tsp faco belle. Cook for about 10 minutes, until browned.
  2. While meat is cooking, make the carrot salad/slaw. Shred carrots. Add to a bowl with pepitas.
  3. Mix olive oil, lemon juice, 1.5 tsp ranch it up, and honey, until the honey is dissolved.
  4. Pour the dressing over the carrots and pepitas, then mix well.
  5. Heat tortillas and assemble tacos with meat, arugula, and carrot salad.
