lemon herb chicken and orzo with peas is a simple, quick dish that's flavorful and delicious - as well as comforting, satisfying, and nutritious. It's full of protein and fiber, with balanced carbs and delightful lemony herb flavor. This one's on repeat in our kitchens! Bonus because it's only 7 ingredients, most of which are shelf stable or frozen, so easy to keep on hand for a fast, easy meal any time - literally, we've been eating this for breakfast.ย 

We like to keep a couple pounds of ground meat in the freezer, so we can thaw when needed for a quick meal. It's saved us more times than we can count!

lemon herb chicken and orzo with peas (1-pot meal)

Ingredients

1-2 T cooking fat (butter, olive oil, ghee, etc...)
1 lb ground chicken
1.5 tsp boro salt
2/3 c orzo
1.5 tsp veggie bouillon (or substitute 2 c stock in place of veggie bouillon and water)
2 c water
1 c frozen petite peas**
1 lemon

**we recommend petite peas, they have a milder flavor and better texture (in our opinion)

Instructions

  1. Heat skillet over medium-high heat. Add cooking fat and 1 lb ground chicken. Sprinkle chicken with 1.5 tsp boro salt.
  2. Brown chicken for 5-7 minutes.
  3. Add 2/3 c orzo, 1.5 tsp veggie bouillon, and 2 c water (or sub 2 c stock for veggie bouillon and water). Stir to combine.
  4. Bring to a boil and cook 5 minutes.
  5. Add 1 c peas and cook an additional 4 minutes.
  6. Turn off heat. Add zest of 1 lemon + 1.5 Tbsp lemon juice.
