This nostalgic favorite is straight from our thanksgiving table, but it's honestly a simple dish that should be enjoyed all year round! Easier to make, yet reminiscent of scalloped potatoes, mama hardie's cheesy squash casserole is a satisfying veggie side that you'll feel good about going back for seconds of.Β

Ingredients

  • 2 medium/large or 3-4 small-medium zucchini, sliced thin
  • 1/2 c sour cream
  • 1 Tbsp butter
  • 2+ c cheese (shredded)
  • 2 tsp cc special seasoning
  • Optional: 1/4-1/2 small onion, diced

Instructions

  1. Slice zucchini thinly (1/8-1/4" thick) and dice onion (if using). Preheat your oven to 375 F.
  2. Heat butter in a skillet over medium-high. If using onion, add now and sautee for 5 minutes.
  3. Next (or first, if not using onion), add the zucchini. Season with 2 tsp cc special and stir to mix. Sautee for 3-5 minutes, until the zucchini lets off some moisture.
  4. Add the 1/2 c sour cream and about 1/4 c of the shredded cheese. Stir and mix until melty.
  5. Transfer to a 9x13" pan. Top with the remaining cheese and sprinkle with some additional cc special seasoning.
  6. Bake for about 20 minutes.
