Season chicken thighs well on all sides with medi mix
If cooking on stovetop:
--heat a saucepan over medium to medium-high, then add cooking fat (butter, ghee, or a high-heat oil)
--add chicken thighs and cook, about 8-10 minutes per side, until heated through to 165 F
If baking in oven:
--preheat oven to 400
--put seasoned chicken thighs in a pyrex or metal baking dish
--bake for about 20-30 minutes, to an internal temperature of 165 F (the range of time is wide because all ovens are different. Get to know yours... and get a kitchen thermometer!)
