medi mix green salad

An easy base salad that's anything but basic. Add your favorite veggies or protein to transform this simple salad into a hearty meal.

We especially love this with roasted golden beets, feta cheese, and pumpkin seeds - but choose your own adventure! You really can't go wrong.

Ingredients

  • Salad greens
  • Seasonal vegetables (radishes, carrots, onions, celery, cabbage, etc...)
  • Nuts and seeds, cheese, croutons, or other tasty salad toppers (we love a little crunch in a salad)

FOR VINAIGRETTE:
Recipe easily scales up, below ratios will yield 2-4 servings

  • 1/4 c olive oil
  • 1 TBSP + 1 tsp vinegar (white or apple cider are great, or try a fruit vinegar)
  • 3/4 tsp medi mix
  • 1/4 tsp salt
  • 1/8+ tsp pepper
  • 1+ tsp honey (or other sweetener, optional but does help balance the flavor)

Instructions

  1. Combine all vinaigrette ingredients in a jar and shake to emulsify. You may need to shake again just before dressing your salad, since we don't use any stabilizers in our recipe.
  2. Prepare your salad: add greens (chopped if desired) and hard vegetables to a bowl. Toss with med mix vinaigrette.
  3. Transfer to serving bowls. Top with soft vegetables, cheese, nuts, seeds, etc...
