medi mix nuts

Pictured here with almonds and cashews, but use your favorite(s)! Simply roast raw nuts, then toss with an oil of your choice and medi mix for a fabulous, homemade nut mix. The deep, complex, herby flavor and will keep you coming back for more.

Obviously great alone, but we also love these nuts chopped on top a salad or savory bowl!

While this recipe takes 40 minutes, almost none of that is active time. Don't let that deter you! This is a low-effort, high-reward recipe.

Also, hot tip! Raw organic nuts are so much cheaper at Costco. They are also usually pretty fresh and good quality, moreso often than the ones we find at other stores.

Ingredients

  • 2 cups almonds or cashews (or a mix)
  • 1 tsp almond, pecan, or another neutral-tasting oil
  • 2 1/2 tsp medi mix

Instructions

  1. Preheat oven to 300 F
  2. Spread nuts in a single layer on a cookie sheet
  3. Roast for 15 minutes
  4. Agitate/shake nuts. Roast for another 15 minutes.
  5. Remove from oven, drizzle with the oil, and mix to coat. Sprinkle with half the medi mix, and mix again.
  6. Roast for 10 more minutes.
  7. Allow nuts to coolΒ completelyΒ on parchment paper, then store in an airtight container

The nuts will get crunchier as they cool, resist the urge to over-roast!
