mediterranean white bean pasta (1-pot)

We love this on a weeknight or even for lunch on a work from home day. Make it with chicken, if desired, or extra beans for a hearty vegetarian or vegan meal!

Ingredients

1.5 Tbsp medi mix

2 servings dry pasta (112 g)

1-2 cans white beans (great northern, navy, cannellini, etc...); use 1 can if adding ground chicken, use 2 cans for a meat-free version

1 squash or zucchini, grated

2 tsp veggie bouillon + 2 c water (or 2 c broth)

Optional: 1 lb ground chicken

Instructions

  1. If using ground chicken, heat 1-2 Tbsp olive oil in a skilled and brown meat.
  2. Add 1.5 Tbsp medi mix, pasta, beans, grated squash/zucchini, and 2 tsp veggie bouillon + 2 c water to skillet.
  3. Bring to a boil and cook for 12-15 minutes (will take about 5 minutes longer than pasta cooking time), until pasta is cooked how you like.
