These smashed potatoes are zesty and crispy on the edges, a wonderful way to enjoy this classic carb! Great alone, with a yummy dip, or as part of a larger meal. papi patatas takes a bit of time to prepare, but it's mostly boiling and roasting, so your active cooking time is maybe 10 minutes.

Instructions
- Fill a pot with water (large enough for however many potatoes you are cooking). Add salt, it should taste ocean-y.
- Add the potatoes and bring the pan to a boil. Adding the potatoes when it's cold helps keep them from falling apart during boiling.
- Boil for 10-20 minutes, until potatoes are fork tender. Remove from water.
- Preheat oven to 425 F. Line a baking sheet with parchment paper.
- Smash potatoes onto parchment with the bottom of a glass.
- Drizzle with olive oil, then season with papi spice - use about 1 Tbsp per pound of potatoes.
- Roast for 20-25 minutes, until edges of potatoes are browned and crispy.
