These smashed potatoes are zesty and crispy on the edges, a wonderful way to enjoy this classic carb! Great alone, with a yummy dip, or as part of a larger meal. papi patatas takes a bit of time to prepare, but it's mostly boiling and roasting, so your active cooking time is maybe 10 minutes.

Ingredients

Potatoes (small ones, or larger ones cut in chunks)

Olive oil

Instructions

  1. Fill a pot with water (large enough for however many potatoes you are cooking). Add salt, it should taste ocean-y.
  2. Add the potatoes and bring the pan to a boil. Adding the potatoes when it's cold helps keep them from falling apart during boiling.
  3. Boil for 10-20 minutes, until potatoes are fork tender. Remove from water.
  4. Preheat oven to 425 F. Line a baking sheet with parchment paper.
  5. Smash potatoes onto parchment with the bottom of a glass.
  6. Drizzle with olive oil, then season with papi spice - use about 1 Tbsp per pound of potatoes.
  7. Roast for 20-25 minutes, until edges of potatoes are browned and crispy.
