One of our main tricks to keep ourselves fed is cooking different proteins and freezing them to heat up on demand! These ranch chicken patties are excellent for this purpose, and pair well with all sorts of veggies and grains to create a balanced, full meal. This recipe is simple and easy, with just 2 ingredients, but so flavorful and rewarding.
Freezing the patties right after you cook them keeps them good for up to a year, so make a couple pounds! You won't regret it.
1.5 Tbsp ranch it up seasoning
1 lb ground chicken (check for this at your local farmers market!)

- Mix ground chicken with ranch it up seasoning (1.5 Tbsp per pound of chicken) until spices are evenly distributed.
- Divide the meat. I usually do 8 patties per pound, for 2 ounces each. It's simple to divide the meat in half, then in half again, then once more - and you have your portions. Roll into balls for now, then you can smash into patties as you put them in the pan.
- Heat your skillet over medium-high. Add cooking fat. Add chicken patties, as many as will fit without touching. Cook for 4-5 minutes on one side.
- Flip. Cook for an additional 3-4 minutes, to an internal temperature of 165 F.
