Ingredients

  • 1 whole chicken
  • 1-2 tsp salt
  • 1 tsp black pepper
  • 1-2 tbsp olive oil
  • fresh rosemary
  • thyme

Instructions

  1. Preheat oven to 460
  2. Remove giblets from chicken, if necessary, and pat dry. Place chicken in a roasting pan with high sides.
  3. Sprinkle with salt, pepper, thyme, and broken rosemary leaves
  4. Insert rosemary sprigs into the chicken cavity
  5. Roast at 460 for 30-35 mins.
  6. Reduce heat to 350 and cook for another 30 minutes.
  7. Reduce heat to 250. Continue cooking for 30+ minutes (depending on the size of the chicken), until skin is golden brown and the internal temperature in the hip joint is 165 F.
