Green tomatoes have such an interesting flavor, but typically the only dish prepared with them is fried green tomatoes. We created this roasted green tomato dressing so we could add that unique green tomato flavor to other dishes! It's also a great way to use up a small amount of green tomatoes - while most recipes call for 2 or more pounds, you only need less than a pound to create this savory, versatile dressing!

roasted green tomato dressing uses our veggie umami seasoning blend, as well as roasting, to help develop depth of flavor and mellow the acidic, tart profile of unripe green tomatoes. We love this dressing served warm over a buddha bowl or protein, or chilled and tossed over crispy greens with pumpkin seeds! It also makes a yummy dip to enjoy with your favorite crackers or crudite, and would be an impressive add to your mezze board.

Ingredients

0.7 - 1 lb green tomatoes
1 tsp veggie umami (or 1/4 tsp salt + pepper to taste)
1 Tbsp olive oil
1/2 tsp honey
2+ Tbsp water
1/4 tsp salt
pepper to taste

Instructions

  1. Preheat your oven to 425 F. Chop the tomatoes. Season with 1 tsp veggie umami seasoning (or 1/4 tsp salt + some pepper) and spread on a baking sheet or roasting dish.
  2. Roast tomatoes for about 30 minutes, until they are soft and have started the brown at the edges.
  3. In your blender or immersion blender cup, combine roasted green tomatoes, 1 Tbsp olive oil, 1/2 tsp honey, 1/4 tsp salt, and 2 Tbsp water. Blend until smooth, slowly adding more water if needed to get to your desired consistency!
