Root vegetables roasted with olive oil and our boro salt for classic, herby flavor. Use carrots, potatoes, sweet potatoes, turnips, carrots, etc... whatever you have and desire!

Ingredients

  • root vegetables (potatoes, carrots, sweet potatoes, parsnips, turnips, etc...)
  • olive oil
  • boro salt

Instructions

  1. Preheat oven to 450. Place all vegetables in a roasting pan.
  2. Toss with olive oil, then sprinkle with boro salt (1.-5-2 tsp per pound of vegetables). Toss again to evenly coat.
  3. Roast for 30-50 minutes, stirring partway through to help vegetables cook more evenly. Check at 25 minutes and assess. Cooking time will depend on your oven and your preferences!
