sauteed medi mix peppers

Bright and savory, these medi mix peppers are an easy veggie side or flavor boost to almost any meal. Some ideas - add to a bowl, put in a wrap, toss in your eggs, or mix in to your pasta.

We especially love using the mini bell peppers (always at HEB, bless), as they're extra easy to slice and you can cook exactly as many as you need without having a leftover half bell pepper to deal with! This is also a great way to use up that leftover half bell pepper slowly wasting away in your fridge.

Ingredients

  • bell peppers
  • medi mix
  • olive oili or butter, to cook

Instructions

  1. Slice bell peppers as desired
  2. Heat a skillet over medium-high.
  3. Add 1 Tbsp cooking oil or butter, then the bell peppers.
  4. Sautee for about 5 minutes, until slightly browned but still crunchy. You can cook them longer if you like them softer!
  5. Season well with medi mix. We start with about 1 tsp per bell pepper, then stir well and taste. You can always add more!
