savory sauteed onion dip

savory sauteed onion dip is great served with roasted carrots, but feel free to eat however you prefer! It's also yummy with toast, crackers, other roasted veggies, or raw veggies (crudite). We even enjoy it as a spread on a sandwich!

Please note - this is not the classic "french onion dip". We leave that up to Lipton. Our version is a bit more sophisticated and tangy, and it's also made with high-protein dairy - labneh, farmers cheese, greek yogurt, or cottage cheese - for more nutrition, plus a different flavor profile and texture.

Ingredients

  • 1 small-medium yellow onion
  • 1+ tsp cc special (or your favorite seasoned salt)
  • 1 Tbsp butter
  • 1 lemon
  • 1/2 c labneh, greek yogurt, farmers cheese, or cottage cheese
  • olive oil
  • Optional: fresh herbs, to serve

Instructions

The recipe shown here is served with roasted carrots. For simple (but delicious) savory roasted carrots, chop your carrots and toss them with 1 Tbsp butter + 1 tsp cc special. Roast at 400 F for about 20 minutes.

For the dip:

  1. Slice onion thinly. Heat a small skillet over medium heat.
  2. Add butter, then onion. Toss to coat, then season with 1/2 tsp cc special. Reduce heat to medium-low.
  3. Sautee for about 15 minutes. We're not going for full caramelization here, just softened and flavorful onions. Turn off heat and stir in 1 tsp lemon juice.
  4. While that's cooking, season your dip base. Stir together the labneh/farmers cheese/greek yogurt/cottage cheese with 1/2 tsp cc special.
  5. Spread the dip in your serving dish. Top with sauteed onions, then drizzle with olive oil and lemon juice. Add some fresh herbs on top, if you have them, and sprinkle with more cc special if desired!
