strawberry, mango + sugo quick jam

We're calling this a "quick jam" - there's no adding pectin, no monitoring temperature, it's not meant to can. It's meant to taste delicious and be eaten quickly, best within 5 days. Great on yogurt, toast, ice cream, cottage cheese, cookies... And, bonus, it's sweetened only with honey (and the fruit, of course). It's also a great way to use up fruit that's over-ripe!

Strawberry and mango are an amazing fruity combination, and sugo salt adds subtle depth that brings it all together. The sumac's citrus flavor elevates the natural tart elements of the fruit, while the gochugaru flakes add complexity and an underlying peppery note. The salt balances the whole flavor profile.Β

Ingredients

The quantities below make about 4 oz of jam.

  • 1 yellow mango
  • 8 medium strawberries
  • 2 Tbsp honey
  • 1/2 tsp sugo salt

Instructions

  1. Peel mango and wash strawberries. Cut both into small pieces (we'd call it "diced").
  2. Put fruit and 2 Tbsp honey in a small saucepan. Heat over medium
  3. Cook for 15 minutes. Turn off heat.
  4. Stir in 1/2 tsp sugo salt.
