sugo cashews + pepitas

sugo cashews + pepitas

Ingredients

2.5 cups cashews
0.5 cup pepitas (pumpkin seeds)
1/4 cup salted butter
1/4 cup honey
1 Tbsp sugo salt + t tsp

Instructions

  1. Preheat oven to 300 F.
  2. Combine honey and butter in a small saucepan. Swirl and heat until liquid is bubbling and fully mixed.
  3. Add 1 Tbsp sugo salt to liquid and mix.
  4. Line a baking sheet with parchment paper. Dump the cashews and pepitas in a pile on the parchment paper, then pour the honey-butter-sugo mixture on top. Stir well to coat, then spread in a thin layer.
  5. Roast for about 20 minutes, rotating baking sheet halfway through (if you think about it).
  6. Remove from oven and sprinkle with additional 1 tsp sugo salt right away while nuts are still very warm.
  7. Allow to cool completely. The nuts will get crunchy and harden up as they reach room temp! Store in an airtight container.
