2.5 cups cashews
0.5 cup pepitas (pumpkin seeds)
1/4 cup salted butter
1/4 cup honey
1 Tbsp sugo salt + t tsp
- Preheat oven to 300 F.
- Combine honey and butter in a small saucepan. Swirl and heat until liquid is bubbling and fully mixed.
- Add 1 Tbsp sugo salt to liquid and mix.
- Line a baking sheet with parchment paper. Dump the cashews and pepitas in a pile on the parchment paper, then pour the honey-butter-sugo mixture on top. Stir well to coat, then spread in a thin layer.
- Roast for about 20 minutes, rotating baking sheet halfway through (if you think about it).
- Remove from oven and sprinkle with additional 1 tsp sugo salt right away while nuts are still very warm.
- Allow to cool completely. The nuts will get crunchy and harden up as they reach room temp! Store in an airtight container.
