tuscan herb pesto

Classic and fresh, there are tons of great ways to use tuscan herb pesto! Pasta, obviously (we love it added to a red sauce) - but also put it on a sandwich or salad, on top of a bowl, or even stirred into a soup. We love it on chicken or as a dip for veggies, too!

Typically, pesto uses parmesan cheese for umami flavor and depth, and to add salt. We give that option, but also provide the vegan substitute of miso + nuts or seeds. This combination adds the umami flavor, salinity, and fat you'd find in cheese. It's also a great alternative when you thought you had parmesan, but actually didn't (we're known for this one).

tuscan herb pesto

Ingredients

  • 1 c basil leaves (packed)
  • 3-4 cloves raw garlic
  • 1 Tbsp tuscan herb (or italian seasoning)
  • 1/4 c pine nuts or cashews (or sub in your favorite nut/seed)
  • 1/2 tsp salt
  • 1/2 tsp putz pepper (or black pepper)
  • 1/4 c olive oil
  • 1 Tbsp lemon juice
  • 1/4 c shredded parmesan or other aged hard cheese (or use 1 tsp miso paste + 1/8 c nuts/seeds, if you prefer)

Instructions

  1. Combine all ingredients in a food processor, immersion blender cup, or blender.
  2. Process until smooth.
