This balanced, hearty, deeply savory meal contains only 4 ingredients and is ready in 20 minutes or less! It's easy to make gluten free or plant-based. Plus, you don't have to cut anything (though we will ask you grate some carrots).

Adding flavorful toppings to this bowl is a great way to change the direction of the meal, and therefore switch it up with the same simple base recipe! Green onions, herbs, chili crisp, pickled onions, sugo salt, hot sauce, etc... get creative with what you have on hand and need to use up.

Sub in another meat or plant-based alternative if you prefer. Use your favorite noodle! Feel free to throw in other veggies (mushrooms sound particularly amazing) or sub completely if you don't like or don't have carrots. But we promise - the shredded carrots in here are absolutely delicious and comforting. Plus, they are great fiber.

Ingredients

  • 1 lb ground beef (or sub another ground meat)
  • 2 carrots, shredded/grated
  • 2.5 tsp veggie umami + 0.5 tsp per serving of noodles
  • 3-4 servings noodles (we love soba, udon, ramen, egg noodles, rice noodles, really any noodle will be yummy!)

***Optional: toppings to serve (green onions, herbs, sugo salt, chili crisp, pickled onions, hot sauce etc...)***

Instructions

  1. Put some water on to boil for your noodles. Make sure to set a timer once you add the noodles to your pot! Drain the noodles and toss with 0.5 tsp veggie umami per serving of noodles.
  2. While noodles are cooking, heat a skillet over medium-high. Add the ground beef. Cook for about 5 minutes.
  3. Shred/grate the carrots.
  4. If desired, remove some fat from the ground beef (we only do this if the beef is particularly high fat). Add carrots + 2.5 tsp veggie umami to the pan with the beef. Cook for 5 more minutes.
  5. Spoon the meat and carrots over the noodles to serve.
