This potato salad recipe has a history! And it's our very favorite potato salad on this planet. Bright and fresh, while still being rich and extremely flavorful, it's what our summertime barbecue dreams are made of.

Every week, we used to go down to Republic Square Park and get the $5 burger deal on Friday afternoon (historical best burger deal ever, iykyk), with a side of potato salad. As good as the burger was, I was really there for the potato salad. And each week, I would eat that potato salad and flavor meditate... bite after bite: what was in there making it taste so damn good??!! Plenty of fresh dill, a good slug of black pepper, whole grain mustard... I started trying to reverse engineer it at home. But try as I might, there was still something missing.

Then, one Friday, I got a bite with a particularly big pop of vinegar and it hit me: PICKLED ONIONS! The next day, I made a batch of pickled onions. Then, reattempted the potato salad. And, hallelujah, eureka, voila! I had done it. And none too soon! Salt + Thyme closed that cafe location, and then closed entirely, not long after. But the flavor of their potato salad lives on!

Ingredients

  • 2.5 lbs potatoes (we like gold potatoes, but any will work)
  • 3-4 stalks celery
  • 1/4 c pickled red onion
  • 1/4 c fresh dill
  • 3/4 c mayo
  • 1+ tsp salt
  • 1 tsp putz pepper (or 1/2 tsp black pepper)
  • 1 1/2 tsp whole grain mustard

Instructions

  1. Wash and cube the potatoes. You can peel if you want, but we prefer our potato salad with skins.
  2. Add the potatoes to a pan of salted water. Bring to a boil and cook for about 15 minutes, until potatoes are tender.
  3. Drain and spread potatoes on a cookie sheet to cool.
  4. Dice celery and pickled onions, chop dill.
  5. Using a fork, partially smash the potatoes. There's no science to it, just vent some frustration. When it feels good, stop.
  6. Mix everything together - potatoes, celery, dill, pickled onions, mayo, mustard, salt, putz pepper.
