arugula + lemon salad can be thrown together any time, using any seasoning you have on hand and are in the mood for! Just follow the simple formula to build the salad, subbing in your favorite oil, seasoning, and cheese.
Endlessly customizable and a great base for a protein or bowl, we find ourselves making this one weekly to get our fiber and colorful, fresh veggies in.
- arugula
- olive oil
- cheese (or leave it out, if you like)
- lemon
- seasoning (our favorites are cc special, blackened, boro salt, medi mix, ranch it up, and sugo salt - or do a combo!)
- Rip or chop greens, if desired. For each serving of arugula, add about 1 tsp oil. Toss well to coat.
- Add seasoning (1/4-1/2 tsp per serving) and lemon (a good squeeze per serving) and toss again. Add cheese of choice (1-2 ounces per serving).
