blackened seasoning + cauliflower is a power duo for flavor and health. This dish would be great with a tahini sauce or our quick cashew sauce!

Ingredients

cauliflower (1 medium cauliflower is about 2 lbs)
blackened seasoning (2 tsp/lb of cauliflower)
olive oil

Instructions

  1. Preheat oven to 450
  2. Wash and trim the cauliflower into florets.
  3. Link a baking sheet with parchment paper. Put the florets onto the parchment paper, then drizzle with olive oil (1-2 tsp). Toss to coat well.
  4. Sprinkle oiled cauliflower with blackened seasoning, then mix well again to distribute seasoning evenly. Use about 2 tsp blackened seasoning per pound of cauliflower. For a whole medium cauliflower, I would use about 4 tsp of seasoning. My trick here is to season, then taste a raw floret. If I want more seasoning, I add more!
  5. Roast for about 15 minutes at 450 F, until edges start to brown. I like my cauliflower softened slightly, but still crunchy in the center for some good texture. If you like your cauliflower softer, cook it for another 5 minutes.
