This simple, quick 1-pot pasta is so nostalgic for me, who grew up eating Tuna Helper. Use canned tuna or salmon (a lower-mercury fish) and whatever cheese you have on hand, plus frozen peas. Packed with protein from the fish and cheese! Plus a little extra protein and fiber from the peas. We love this topped with sugo salt for added pops of flavor!

Ingredients
1.5 tsp blackened seasoning
2 cans salmon or tuna (packed in water)
2 servings dry pasta (112 g)
1-2 Tbsp butter or olive oil
2 tsp veggie bouillon + 2 c water (or 2 c stock)
1 c frozen peas
1 c shredded cheese
Instructions
- Open and drain the salmon/tuna.
- In a medium-large skillet, add 1-2 Tbsp butter/olive oil, salmon/tuna, dry pasta, 1.5 tsp blackened seasoning, 2 tsp veggie bouillon + 2 c water (or 2 c stock). Stir well.
- Bring to a boil and simmer for 10 minutes.
- Add peas and cook another 5 minutes.
- Stir in cheese.
