Healthy, delicious, fresh, and easy! This mediterranean chickpea salad recipe is so quick and versatile, it's one of our favorite weekday rescue meals. And the flavor reminds us of everything we love most about greek food - herby, savory, fresh, and light!

Just chop the veggies, toss it all together, and serve as desired. This salad is great on its own, in a wrap (as seen here), in a hearty bowl, as part of a greek meal, or paired with medi mix chicken thighs. We've even been known to eat it for breakfast.

Fun fact: Since creating this recipe, I've eaten more chickpeas than since I was a vegetarian in college... and that was a lot of chickpeas.Β

Ingredients

  • 1 can chickpeas
  • 1 small or 2 snacking cucumbers
  • 1 medium tomato or 10 cherry tomatoes
  • 1/4 small red onion
  • feta cheese (use as much as you like)
  • 2 tsp medi mix
  • 1.5 Tbsp olive oil
  • 1/2 lemon, juiced

Instructions

  • Chop all the veggies: peel and slice/dice cucumbers, dice tomatoes/quarter cherry tomatoes, dice onion
  • Combine chickpeas, all veggies, 1.5 Tbsp olive oil, 2 tsp medi mix, and lemon juice. Mix well
  • Add feta and mix again
