red beans and rice

From idea to plate in under 30 minutes, this red beans and rice is an easy meal to throw together using blackened seasoning for depth of flavor. I remember my mom spending hours to make red beans and rice from scratch when I was a kid. We shortcut it here with canned beans! And in my opinion, it tastes just as good (sorry, mom).

Ingredients

1 c rice

2 cans red kidney beans

2 Tbsp blackened seasoning

1 bell pepper, diced

6-8 oz tomatoes, diced

1 Tbsp olive oil or butter

1/2+ c water

Optional: green onion, pickled peppers or onions, etc... to top

Instructions

  1. Cook your rice, however you prefer.
  2. Heat butter in a skillet over medium-high heat. Add diced bell peppers. Cook for 2 minutes. Add tomatoes and cook for 2 more minutes.
  3. Add beans, 2 Tbsp blackened seasoning, and water.
  4. Cook for 5-10 minutes. Serve over rice.
