From idea to plate in under 30 minutes, this red beans and rice is an easy meal to throw together using blackened seasoning for depth of flavor. I remember my mom spending hours to make red beans and rice from scratch when I was a kid. We shortcut it here with canned beans! And in my opinion, it tastes just as good (sorry, mom).

Ingredients
1 c rice
2 cans red kidney beans
2 Tbsp blackened seasoning
1 bell pepper, diced
6-8 oz tomatoes, diced
1 Tbsp olive oil or butter
1/2+ c water
Optional: green onion, pickled peppers or onions, etc... to top
Instructions
- Cook your rice, however you prefer.
- Heat butter in a skillet over medium-high heat. Add diced bell peppers. Cook for 2 minutes. Add tomatoes and cook for 2 more minutes.
- Add beans, 2 Tbsp blackened seasoning, and water.
- Cook for 5-10 minutes. Serve over rice.
